Decadent Cacao Cream Pie

Crust:
2 Cups Walnuts
1 1/2 Cups Whole Rolled Oats
Pinch of Sea Salt
Tiny Drizzle of Agave or Maple Syrup

1) In food processor using 'S' shaped blade, blend walnuts, oats, and salt until a fine flour.
2) Add a tiny drizzle of agave or maple syrup just enough so that the dough sticks together when you press it with your fingers. You don't want the dough to be too wet. It should be dry enough to crumble slightly and will taste like a gram cracker crust.
I usually cut a circle of parchment paper to fit into the bottom of the pan I'm using before I lay the crust in. This helps the pie slices come out perfectly when the pie is cut.
3) Pat the crust into the bottom of the cake pan and slightly up around the edges. Set aside while you make the chocolate cream filling.

Cacao Cream Filling:
about 4 Cups Avocado
1-2 Cups Cacao Powder
1-2 Cups Maple syrup or Agave
pinch of Sea Salt
dash of Vanilla
1) Blend all ingredients in food processor until very creamy. Taste and add more cacao or sweetener to taste.
2) Pour onto crust and spread evenly.




Cashew Cream Drizzle:
1/2 Cup Raw Cashews, soaked 10 minutes
tiny dash of Agave or Maple Syrup
small amount of filtered water, just enough to blend with
1) Blend in blender until very creamy.
2) Put cashew drizzle into icing decorator or small ziplock bag (cut one tiny corner off and use like icing decorator).
3) Like the picture below, make even stripes across the whole pie with the white drizzle.

4) With a chop stick, lightly drag the tip across the top of the pie, back and forth, in the same fashion that you laid out the lines of white drizzle with. Start perpendicular to the white lines and continue across the whole pie.


5) Cover and put in freezer for about four hours to set. (You can leave in freezer indefinitely and just pull the pie out a half an hour before serving)
Serve with cut strawberries, black berries, fresh mint sprigs, or whatever else your imagination comes up with.
This is a very rich, decadent, creamy delight. It's fun to have people guess what it's made with as they are eating it. They are always surprised when they find out the base of the pie is avocado! Avocado is such a great base to start with for a raw pie as the flavor of avocado is hidden, yet the smooth, creamy, pudding like consistency is unparalleled to any other pudding out there - and it is healthy for you! Another one of my all time favorite pies using avocado for it's base is the Key Lime Pie.
